CHEF JANET MEMBER AND TRAINER WITH THE CANADIAN RESTAURANT AND FOODSERVICE ASSOCIATION

CRFA developed the National Food Safety Training Program in response to a growing demand for food safety training that meets the needs of foodservice operators from coast-to-coast. Designed to train and certify quick-service, full-service, chain and independent operators and employees to a national standard of food safety, NFSTP was launched in 2004. NFSTP is now available across Canada through a network of certified trainers.

CHEF JANET'S INTERACTIVE COOKING LESSONS

At selected B& B's in the County, you will be inspired by the abundance of local and perfect autumn ingredients in Chef Janet's Interactive Lessons which include her demonstration of the use of the freshest market ingredients. Come learn from a Master Chef and improve your cooking style!

From about 5:00 pm or so we will gather in the kitchen for the cooking class where Chef Janet will demonstrate and guests will help prepare (and consume!) a 4-course meal consisting of soup, salad, entrée and dessert.

Chef Janet will discuss the many aspects of preparing gourmet meals, including how to prep, how to pre-cook and hold, and how best to present the dishes. And, of course, recipes will be provided. Local Wines will also be served with the meal.

On the Menu:
· Two Varieties of Pumpkin Soup or Butternut Squash Soup
· Roast Loin of Pork with Sour Cherry Sauce or a Butter- flied Leg of Lamb
· Maple Glazed Brussels sprouts,
· Roasted Carrots, Potatoes, Fennel
· Poached Pear on Wild greens with Maple Vinaigrette
· Homemade Apple and Cranberry Pie or Baked Apple en Croute with Aged Black River Cheddar

(Menu may be amended upon request or for allergies.)

Or better yet, come to the County to celebrate that anniversary or special birthday! Try the lovely Romantic Dinners for Two with your own private chef. Some favorite menus are:

· Tiger Shrimp/Mango Salsa Cocktail
· Whole Beef Tenderloin wrapped in Proscuitto and Fresh Herbs
· Wild Mushroom Risotto
· Market Vegetables
· Cheese Platter and Fruit with a vintage Port

· Filet of Lamb Tenderloin en croûte
· Roasted Parisienne Potatoes
· Steamed Fresh Asparagus with Lemon Butter
· Molten Chocolate Cakes with Fresh raspberries
