Hummus

Sun Dried Tomato, Olive Pinwheels
Mini Quiches
Strawberry Shortcakes
1
can drained chick peas
3 tablespoon extra virgin olive oil
2 garlic cloves, minced
1 teaspoon fine sea salt
1/8 teaspoon ground red pepper
1 tbsp "tahini" *sesame seed paste-optional
3 tablespoons fresh lemon juice (1 lemon juiced and the zest)
Place
all ingredients into either into food processor or use an immersion
blender, pureeing to the texture you want.
Serve with Lavash, crackers or pita. Or use instead of butter on
sandwiches.

Dried Tomato, Olive Pinwheels (double recipe)
1 lb ( 2 pkgs)
pound cream cheese
1 tbsp fresh parsley -- minced
2 tsp fresh or 1 tsp dried basil -- minced
1 tsp fresh thyme -- minced
1/2 tsp rosemary -- finely minced
1 tablespoon minced garlic
½ cup rehydrated dried tomatoes -- minced
1/3 cup pimiento -- diced (well drained)
1/3 cup pitted black olives -- coarsely chopped or thinly sliced
(well drained)
2 pkgs of 12-inch flour tortillas
Soften cream
cheese to room temperature. Place in mixer bowl.
Add fresh herbs,
garlic, tomatoes, pimento, and black olives to softened cream cheese.
Mix until well blended.
Place tortillas
on work surface. Smooth 6 oz cream cheese mixture over tortillas.
Roll very tightly (as for a jelly roll) to create a pinwheel effect.
Cover and refrigerate until well chilled, 4-6 hours.
Cut off ends
of tortilla roll and discard. Portion remaining roll into 10 slices
per roll.

Quiches
Ready
made tart shells * 3 eggs beaten
1 cup milk or 10% cream
½ cup jarred red peppers
1 6 oz goat's cheese
Small jar of pesto or fresh basil chopped
Parmesan as garnish
Salt & Pepper to taste
Preheat
oven to 400. Prick shells over surface and place into hot oven on
a cookie sheet. Meanwhile beat all other ingredients in a bowl,
except basil and peppers. Take shells out after 5 to 7 min. Turn
oven down to 350. Pour egg mixture into shells and garnish with
peppers, basil. Bake at 350 for 30 min.

You can use a thawed package of puff pastry rolled out thinly and
pricked well - also pre-bake.


Strawberry
Shortcakes
2 cups sifted
flour
2 tbsp sugar (plus 1 tbsp)
3 ½ tsp baking powder
½ tsp salt
¼ butter plus ¼ shortening
¼ sour cream
¼ to ½ cup milk
Strawberry topping
2 pints cleaned strawberries
3 tbsp sugar
Whipping cream,
whipped
1.Pre heat oven
to 375
2. Sift dry ingredients together in food processor or bowl.
3. Work butter and shortening into flour mixture. Lightly mix sour
cream and ¼ cup of milk to mix in to create soft dough; adding
more milk if necessary.
4. On lightly floured board roll dough out and cut into rounds with
biscuit cutter. Sprinkle tops with remaining tbsp of sugar
5. Place rounds onto baking sheet and bake 15 to 20 mins making
sure the tops don't scorch.
While warm split
in half and top with berries and cream.
